Who are you, and what do you do?
Hi, I’m Debbie of Debbie Gillespie Cake Design.
I’m a bespoke wedding cake designer providing innovative designs for creative couples who want their wedding to truly reflect their personalities.
When and why did you start your Company?
I made my first wedding cake in 2005 (which was my own) and got bitten by the sugarcraft bug.
Being able to create beautiful designs which people could not only admire visually but also enjoy eating gave me the creative outlet that my NHS job didn’t.
In November 2014, I left the NHS and turned my passion into a full-time business, initially providing all types of cakes but later specialising in weddings.
What inspires you?
I live in the glorious countryside of West Yorkshire so it is hard not to be inspired by its natural beauty.
I therefore specialise in using the natural woodland textures and bold florals that surround me.
I am also a closet artist, so painting on cake is when I am happiest.
However, I do have a slightly dark and nerdy alter-ego and love to include whimsical elements e.g. pets, pastimes etc.
At the end of the day, the couple are always my greatest inspiration.
Do trends influence your work?
I do watch the trends but I don’t follow them necessarily.
It is important for me to be an individual and create designs that excite me, not just churning out the same as everyone else.
I also want my customers to feel they can be brave and independent in their choices and not feel the need to just follow what is trendy.
Do you have a favourite wedding style?
I am very partial to wood and have built a little reputation as the tree cake lady.
One of my most favourite recent designs is Blossoming Love, a staircase-style tiered cake with 3D tree and cherry blossoms, finished with a handpainted couple sitting on a bench.
Equally I love designs that have 360 degree interest, which draw the observer in.
I did a chocolate wedding cake that had the craziest list of requirements ever (not every day you get asked to put the Vauxhall logo on a wedding cake!) but each element was so poignant to the couple and their guests.
That is so much more important than something that looks beautiful but is just stuck in a corner and not enjoyed.
What do you love most about your Job?
I love sitting down with couples and hearing their love stories, proposals, interests etc (I am just generally nosey!!!).
The most fabulous part is taking these dreams and crazy ideas, moulding and embellishing them and turning them into something special that gives everyone happiness.
I love every aspect of sugarcraft and want my customers to feel that excitement and passion too. For me, it is not just a cake, it is an experience!
What do you do in your chill time/perfect day off?
My happy place is by the sea on the Yorkshire coast, listening to the waves whilst chilling out with my family.
And sometimes with my sketchbook too.
What is your greatest achievement?
In my first year of full-time business, I was a finalist in the North of England Wedding Awards. The following year (2016) I was the winner.
It is in recognition of excellence in customer service and judged purely on customer feedback so that means the world to me.
In June 2018 I was also named in Yorkshire Life Magazine as one of the 6 best wedding cake designers in Yorkshire.
The journalist was particularly taken by my handpainted Harry Potter design.
What do you see as the future of your Company?
I would love to be known as the go-to person in the North West for both woodland and alternative wedding cakes (lets say, the crazy cake lady!).
I would love to do more large sculpted cakes and I am still desperately waiting for my first Star Wars commission – anyone?!?
I have no plans to expand my team – my name is above the door and customers can rest assured that I will be there from start to finish.
For that reason, I can only take on a limited number of commissions per week so that each creation has the undivided attention that it deserves.
I ultimately want to continue working with fabulously creative couples, making increasingly wild and ambitious wedding cakes that spread joy to everyone involved.
